Description

巴斯克，烤至焦香的起司蛋糕，來自西班牙聖賽巴斯蒂安（San Sebastian），近年來風行世界各地。

巴斯克的成分很單純，主角是大量的奶油乳酪、鮮奶油和蛋，烤至表面焦糖化，焦黑色澤帶來的是濃厚的焦糖香和蛋奶香氣。

Season 的版本使用極少量澱粉，並透過烘烤與冷卻時機的控制，使蛋糕更加濕潤綿滑；切開就會發現，中心質地偏向膏狀，入口即化，外圈則充滿細小孔洞就像玉子燒般，輕盈柔軟，帶來雙重口感及香醇起司香氣。
